About the Role:.

An exciting opportunity to become Tonic Bar Manager for our new flagship location at The Well! 

We are seeking the right individual to join our fast-growing and dynamic team. The will play a pivotal role in opening and developing the Tonic House cocktail bar and lounge space, and play a key role in creating a unique bar and events space in the heart of Toronto. 

The right candidate would be passionate about the drinks industry and play an integral role in creating a new exciting drinks menu as part of our growing team. This is an exciting opportunity to be part of building a brand new Food and Beverage department for Sweat & Tonic. 

The Tonic Bar Manager will play a key role in overseeing all aspects of Sweat and Tonic’s F&B experience at The Well location and delivering an elevated guest experience. This includes overseeing operations of Tonic Bar (Cafe Space), and Tonic House (Cocktail Bar & Lounge) 

The location manager will play an integral part in growing the newest revenue stream of the business. This role will involve producing SOP’s, creating and delivering new menu items and driving the business to deliver and improve KPIs. 

The right candidate for this role must have a passion for hospitality, they will be responsible for delivering an exceptional guest experience, and overseeing all operational elements related to the F&B programme at our The Well location. 

The position requires the Tonic Bar Manager to manage all operational elements of Tonic Bar and Tonic House. The successful candidate will work closely with the F&B and Retail Manager in growing a new department in a dynamic start up environment. 

The right candidate will be sales, and data focused, and report on monthly sales, gross margins, labor and waste metrics. 

This position requires the candidate to work Tuesday - Saturday. The candidate must be available to work weekends and evenings, and occasionally will be required to work events as requested by the F&B Manager. This role involves being on standby for emergency situations as required. 

Primary Job Responsibilities

Reporting to the Food, Beverage, & Retail Manager, the Tonic Bar Manager (The Well)  will be responsible for:

  • Playing an integral part in creating a new and unique drinks menu for the Sweat & Tonic The Well. 
  • Creating details drinks SOP’s, supporting training material, and taking a hands on approach to training your team. 
  • Create a build a new team of bartenders - and play an integral role in creating a structured training environment, and becoming a mentor to a team of 30+
  • Overseeing the day-to-day leadership of the front of house food and beverage operation of Tonic Bar and Tonic House.
    • Oversee all ordering and receiving functions for Tonic Bar and Tonic House at Yonge & Shuter,  maintaining stock availability, whilst ensuring waste is minimized.  
  • Delivering Key Tonic Bar Metrics - working closely with the F&B Manager in achieving weekly Gross Margin, Labour & Waste metrics.  : 
  • Working closely with the F&B Manager to develop new and exciting menu updates, keeping on top of trends, and catering to S&T guests requirements. 
  • Effectively execute and oversee weekly inventory counts for Tonic Bar, and Tonic House. 
  • Work closely with your team to ensure waste is minimized and closely monitored on a daily basis. 
  • Lead from the front, taking a hands on approach, lead by example, working in front-line positions to impart knowledge and experience of best practices and processes to deliver an exceptional guest experience.
  • Responsible for building, training and managing a team to deliver guest experience that exceeds expectations in all product categories.
  • Report weekly on monthly on COG and revenue targets. Develop strategies and initiatives  to incrementally improve performance in a timely manner.
  • Develop, train, communicate and reinforce the service vision and standards to team members and coach them in supporting the successful execution of the vision.
  • Consistently display exceptional leadership by providing a positive work environment, counseling team members as appropriate, and demonstrating a dedicated and professional approach to managing a team.
  • Develop inventory management systems and processes for food and beverage products. 
  • Demonstrate a high level of commitment to processes that allow team members to provide service that is aligned with our vision of creating exceptional experiences.
  • Ensure compliance with health and safety regulations, including food safety standards .
  • Assist F&B and Retail Manager in merchandising, and restocking of retail offering as requested. 
  • Work with the team to perform month-end inventory of retail merchandise.

About You:

  • You’re passionate about the food and drinks department and determined to join a new exciting team! You’re passionate about mixology and have a great knowledge of the Toronto bar industry. 
  • You’re ambitious to join a new and exciting department, and play an integral part in building a new exacting department within the S&T brand. 
  • A dedicated and passionate specialist comfortable in the day-to-day hustle and bustle of FOH operations as well as proficiency presenting and analyzing numbers and strategy in a management environment. 
  • 2-3 years of bar experience is essential, preferably in a cocktail bar. 
  • Experience working as a food and beverage leader, preferably within a wellness environment. 
  • Food and beverage background with strong focus in food, and development and high level of beverage proficiency. 
  • Barista experience and training proficiency. 
  • Experience managing teams of up to 15. 
  • Brings a hands-on approach to training and a leadership style committed to developing and motivating the team to attain a superior level of guest service;
  • Strong computer skills, with knowledge of G-suite, particularly Google Sheets or Microsoft Excel.
  • Strong problem-solving and creative thinking skills;
  • Thrives in a fast-paced environment-maintaining composure and objectivity with guests and team members;
  • Available to work nights, weekends, and/or holidays as required.
  • A full drivers license is preferred for this position.
